Food Safety Training
Thanet District Council runs Basic and Intermediate Food Hygiene
Certificate courses.
Level 2 Award in Food Safety in Catering
Courses are designed to give workers in the food trade an
appreciation of the fundamentals of food safety and cover the
following:
- Bacteriology
- Food Poisoning
- Prevention of Food Poisoning and Food Contamination
- Personal Hygiene
- Premises, Equipment and Pest Control
- Cleaning and Disinfection
- Legislation
Courses will be run every second month and will be held one
evening per week for a period of three weeks in the Council
Chamber, Thanet Council Offices, Cecil Street, Margate, between
1830 hours to 2100 hours.

Level 3 Award in Food Safety in Catering
For those working in all food businesses at a supervisory
level
Changes in legislation effective from January 2006 have placed
greater onus and accountability on anyone in the food business with
supervisory responsibility. It is vital they have the knowledge and
confidence to do their job effectively. The course replaces the
CIEH Intermediate Certificate.
The qualification covers the following topics:
- Legislation
- Supervisory management
- Temperature control (chilling, cooking)
- Cleaning
- Contamination control
- Applying and monitoring good hygiene
practices
- Implementing good food safety procedures
- Contributing to the safety training of others
