Thanet District Council runs Level 2 Award in Food Safety in Catering courses.

 

Who needs this qualification?

Anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

 

Typical environments may include:

 

  • pubs, hotels, restaurants
  • supermarkets and retail environments
  • food and drink manufacturers
  • hospitals
  • care homes
  • schools
  • prisons

Why is the training important?

Everyone who works with food has a special responsibility for safeguarding the health of consumers and ensure that the food they serve or sell is perfectly safe to eat.

 

Learning outcomes

  • Firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved.
  • Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling.
  • Confidence and expertise to safely deliver quality food to customers.

Refreshment of this qualification is recommended at least every three years.

 

Food Safety First Principles (second edition) book is included in the price.

Duration

Courses will be run every second month and will be held one evening per week for a period of three weeks in the Council Chamber, Thanet Council Offices, Cecil Street, Margate, between 1830 and 2100 hours.  All three evenings must be attended.

Level 3 Award in Food Safety in Catering

For those working in all food businesses at a supervisory level

 

Changes in legislation effective from January 2006 have placed greater onus and accountability on anyone in the food business with supervisory responsibility. It is vital they have the knowledge and confidence to do their job effectively. The course replaces the CIEH Intermediate Certificate.

 

The qualification covers the following topics:

  •  Legislation
  •  Supervisory management
  •  Temperature control (chilling, cooking)
  •  Cleaning
  •  Contamination control
  •  Applying and monitoring good hygiene practices
  •  Implementing good food safety procedures
  •  Contributing to the safety training of others
