It is a legal requirement that food businesses have a documented food safety management system in place.
Such a system will identify hazards that may arise in the business such as contamination by bacteria, foreign matter or chemicals, or growth of bacteria that might lead to food poisoning, and describe controls and monitoring actions to prevent the hazards leading to unsafe food.
The Food Standards Agency has produced a system for small businesses called “Safer Food Better Business”, which will help you prepare a food safety management system. The system helps you identify where hazards may arise and suggests means of controlling the hazards. The second half of the folder has a diary and forms for you to record your monitoring of the controls.
The folder can be ordered free of charge from the Agency. Versions are available for caterers, retailers and cuisines such as Indian, Chinese, Pakistani, Bangladeshi and Sri Lankan. Supplements can be added to the catering pack for care homes and childminders.
Safer Food Better Business comes with a DVD guide in 16 languages to help you complete the folder. If you are having difficulties, the food team will provide a free coaching session at your business upon request.
