Food Hygiene – The Basics
- You must ensure that you have a suitable documented food safety system (HACCP) in place and where appropriate written daily records.
- Controls must be in place to keep food safe (e.g temperature controls) and to prevent cross contamination.
- You must keep documented records of the suppliers that provide you with food or food ingredients.
- All food handlers and kitchen staff must have appropriate food hygiene training.
